Four cheese sauce found at Mama Melrose in Disney World. Literally the best sauce Ive ever eaten! The restaurant has now closed unfortunately.
Ingredients
4 tbsp butter
1/4 cup flour
1 qt half & half
1 qt heavy cream
1/4 cup Parmesan cheese – finely grated
1 oz Asiago cheese – shredded
1 1/2 tbsp Pecorino cheese – shredded
2 oz Fontina cheese
1 oz garlic – minced
1 tsp olive oil
1/2 tsp kosher salt
1/4 tsp white pepper

Directions
- Melt butter and stir in flour to create a roux, cook over medium heat for 5-7 minutes stirring often.
- In a 4-quart pot add olive oil and heat. Add garlic and milk, bring to a simmer. Stir in roux. Add heavy cream and cheese, simmer.
- Season with salt and white pepper to taste.
